These were honestly the best homemade ribs I have ever had and they are very easy!
This easily fed the two of us (if feeding more, use 3.5-4 lbs of meat)
1.5-2 lbs of pork baby back ribs
1/4 cup packed brown sugar
1/2 tsp of hickory smoked salt (I used the Adam Reserve hickory salt from HEB, but garlic salt could be substituted)
1/4 teaspoon of pepper
Chili powder (as much as desired. We don't like spicy things, so I only added 1/4 tsp, and they were not spicy)
3/4 can of Coke
BBQ sauce (any bottled type is fine)
1. In small bowl, mix b. sugar, salt, pepper and chili powder. Rub into ribs.
2. Cut ribs into halves or thirds so they fit in the Crock pot
3. Put a little of the Coke in the bottom of the pot, place ribs in and pour remaining Coke around ribs.
4. Cover and cook on LOW for about 8-9 hours.
5. Remove ribs from pot, discard liquid.
6. Brush ribs with BBQ sauce, pour a little BBQ sauce on bottom of pot, and put ribs back into Crock Pot. You can add more BBQ sauce if you wish.
7. Cover and cook for another hour!

Sounds yummy... when I'm able to be more adventurous with my proteins - I might have to try it.
